Berry Chia Pudding

Chia seeds are no longer just for growing pets. They are an excellent source of essential fatty acids and fiber, along with several important minerals like calcium and manganese. They are also very helpful for the digestive system because they keep things moving and thus reduce any bloating around the midsection. When they are added to liquid they plump up and form a gel like consistently, making them an ideal base for super healthy vegan pudding. This is one of my go to breakfasts or snacks before a tough workout because they provide a lot of sustenance but are so easy to digest. I like to make a few servings at once and keep them refrigerated in mason jars.

Serves: 1
INGREDIENTS:
  • ½ - 1 cup berries, fresh or frozen
  • ½ cup almond milk
  • 2 tablespoons chia seeds
  • 1 date
  • ⅛ teaspoon vanilla extract
  • ⅛ teaspoon cinnamon plus a dash to sprinkle on top
DIRECTIONS:
  1. Combine the almond milk, date, vanilla and cinnamon in a blender and blend until the date is fully broken down and blended in. Pour into a bowl or mason jar and stir in the chia seeds. Refrigerate for 20 minutes, giving them a stir about 10 minutes in to ensure even consistency. Serve with the berries and a sprinkle of cinnamon. This will keep well in the fridge for 2-3 days.
