Cacao Nutty Bear Droppings

These are rather unattractive… but that is advantageous because they probably will not disappear too quickly if you live with other people.  Their look definitely does not betray how tasty they are.  You can use basically any nuts, seeds or dried fruit, although this time I just used dates so that the cacao would have center stage.  Whatever dried fruit you use has to be soft enough to blend into a paste, if they are a bit too hard and dried out you can soak them in a bowl of water for an hour or so.

Serves: 36-40 pieces
INGREDIENTS:
  • 2½ cups dates
  • 1½ cups almonds chopped
  • 1½ cups pecans chopped
  • 1 cup raw cacao
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
DIRECTIONS:
  1. Blend the dates with a handheld mixer or food processor, or mash with the backside of a sturdy fork. Stir in the cacao, vanilla and cinnamon then fold in the nuts and mix until distributed evenly. Prepare to get messy: roll a spoonful of the mixture between your palm to form into balls. Store in the fridge for a few days or the freezer for a few weeks.
