Cherry Smoothie Chia PuddingChia pudding is usually made by soaking chia seeds in nut milk along with whatever flavorings are desired. The seeds become gelatinous when they come in contact with liquid and after around 20 minutes the mixture thickens up to a pudding-like consistency. Back in the days of the Aztecs chia seeds were revered for the energy they provided and were a secret weapon of warriors. The chia pudding of today is a great way to consume these tiny seeds, since it is easy to digest and full of nutrients. To make it more decadent and into a more energy dense meal I like to use a smoothie as the liquid base instead of just nut milk. It makes the pudding sweet enough to enjoy for dessert and substantial enough to refuel after a tough workout. While the options are limitless these are they types of ingredients I like to use for a warrior version. The seeds and protein powder provide a high dose of protein to help immunity and to recover from long, active summer days. The seeds and flax oil, and maybe even the protein powder depending on the type used, offer essential fatty acids, especially omega-3s which are necessary for energy, fighting inflammation, keeping the cardiovascular system healthy and keeping brain function optimal. The fruit, cherries in this case, provide sweetness and flavor, plus a range of vitamins, minerals and antioxidants. The dates add in some extra fiber and fast energy, plus their rich sweetness brings all the other ingredients together into something better than the sum of their parts.

INGREDIENTS:
  • 1 cup cherries
  • 1 cup almond milk
  • ¼ cup chia seeds
  • 1 scoop vanilla protein powder
  • 1 tablespoon flax seed oil (or other EFA oil or oil blend)
  • 2 Medjool dates, pits removed
DIRECTIONS:
  1. Blend the cherries, almond milk, protein powder, flax oil and dates in a blender until everything is fully broken down. Pour into two containers or mason jars with lids along with the the 2 tablespoons each of chia seeds and shake well so the seeds distribute evenly and don't clump together. Refrigerate for 20 minutes, giving them a shake after 10 minutes to ensure even consistency. 20 minutes is a minimum, they can be made the night before for breakfast and they will keep well in the fridge for up to 2 days. Serve with fresh chopped fruit or nuts on top.
