Cilantro Pineapple Green Juice

Green juice is best tasting when the leafy greens are cut with some fruits and accented with crisp cucumber and fragrant herbs. This is one of my favorite combinations that I drink regularly year-round. When making juice or smoothies I like to combine ingredients that would taste good together in a dish, these ones for example could become a salsa for fresh seafood. If the ingredients are complimentary as whole foods they will likely make a delicious drink. Freshly pressed juice has been getting more and more trendy and juice bars are popping up everywhere. These juices are several times more expensive than the bottled, pasteurized juices that have been exposed to high heats and have additives to make them shelf stable. Fresh juice, ideally cold-pressed, should be consumed as soon as possible, will only keep for a couple days and needs to be refrigerated. The benefits are in its high concentration of vitamins, minerals, antioxidants and enzymes that are digested and absorbed easily.

Serves: 1-2
INGREDIENTS:
  • 1 small head romaine lettuce
  • 3 stalks kale
  • 1 cup pineapple, peeled and cubed
  • 1 cucumber
  • 1-2 apples (use tart ones like Granny Smith or sweeter ones like Gala according to your preference)
  • ½-1 bunch fresh cilantro
DIRECTIONS:
  1. Cut each ingredient into pieces the right size for your juicer and pass them through one by one. It can be easier to juice this many greens if you break them up with the other juicier ingredients- I usually put a piece or two of kale in, followed by a piece of lettuce then some pineapple, then some cilantro and finally some apple and cucumber to help it all wash through, or an order similar to that and repeat until finished.
