Creamy Tropical Green Smoothie

I have been on a major smoothie kick the past few weeks, trying out different combinations every day and this one is my favorite so far. It has a lot of fruit and ends up making around 5-6 cups, big enough for breakfast or lunch after an intense morning workout or for sharing if it’s a less active day. For greens I used lots of spinach, they don’t have much flavor so they are a good gateway leafy green for anyone new to green smoothies. Nutritionally, they are a great source of nutrients that contribute to bone health including calcium, magnesium and vitamin K, they are also high in antioxidants, fiber, iron, manganese and vitamins A and C. For the fruits I kept it light, sweet and summery tasting with pineapple, mango, banana and peaches, due to the time of year I used frozen but fresh is even better if available. To make it more filling and add in healthy fats and protein I used a scoop of vanilla protein powder (go for a good quality vegan or whey option), an avocado and some cashew butter. These last three ingredients make it taste more like fruity ice cream than a healthy smoothie, and while they all contribute to this effect the cashews are what really makes it. If you have some smoothie boosters around like chlorella, spirulina or maca it’s good to be in the habit of throwing them in all your smoothies so definitely add some in. Fresh lime juice is also an option for an extra layer of flavor.

Serves: 1-2
INGREDIENTS:
  • 3-4 cups spinach
  • 1 cup mango chunks
  • 1 cup peach slices
  • 1 cup pineapple chunks
  • 1 banana, sliced
  • 1 avocado
  • 1 scoop vanilla protein powder (I used the Sunwarrior Brand's vanilla Warrior Blend)
  • 1 tablespoon cashew butter (or 2 tablespoons cashews)
  • Optional: 1 teaspoon powdered chlorella or spirulina
  • Optional: 1 teaspoon maca powder
  • Optional: juice of ½ lime
DIRECTIONS:
  1. Throw all the items in a blender along with enough water to help it all blend. If all the fruit is frozen you will need more water but if some of it is fresh then you will not need much but some ice might be nice to thicken it up and cool it down.
