Crunchy Apple Almond Fruit Boat

I generally prefer finger food, especially in the summer, so I like to make food that is socially acceptable to eat with my fingers. Fruit boats just don’t work any other way.  This one makes a nice and quick, lazy option for a healthy dessert or small breakfast. The dates make it really sweet and the apple and buckwheat provide lots of crunch.

Serves: 1
INGREDIENTS:
  • 1 apple
  • 2 soft dates
  • 1 tablespoon almond butter
  • 2 pinches cinnamon
  • 2 teaspoons buckwheat grouts
DIRECTIONS:
  1. Cut the apple in half and take out the core, then some extra apple to make room for the fillings. Next, slice open the dates to remove the pit and then smush them into the bottom of the apple and spread them around as best as you can. Next goes the almond butter, half a spoonful in each apple half, then sprinkle with cinnamon and press on the buckwheat grouts.
