Cucumber Hummus BitesWith all the diets that come and go the Mediterranean based eating style has stayed in the spotlight for some time now. It is based on good quality plant-based foods including vegetables, fruits, whole grains, legumes, nuts and seeds along with some lean animal protein sources like fish and chicken. Seasoning is accomplished with herbs and red meat is limited, though red wine is regularly on the menu. This is an eating style abundant in nutrients that helps promote healthy bodies from efficient digestion to strong hearts. While sticking to eating regimes too diligently isn’t the best way to achieve health and balance, adding in more plant foods and old-school Mediterranean ideals of fresh, whole foods, breaking bread with loved ones and slowing down can be hugely beneficial for us inside and out.

Olives and herbsA simple appetizer like this lets the ingredients shine and is really low maintenance- equalling less time in the kitchen and more time enjoying those around you. It can be made in advance and adjusted according to preference and what is available. Tatziki or baba ganoush could replace the hummus and the olive on top could be replaced by a cherry tomato or small clump of grated carrot. Fresh herbs are not necessary but they do add a little special something. Basil and dill are two versatile, summery options but cilantro, thyme or oregano are also fragrant and light enough to not overpower the other ingredients.

Serves: 24 bites
INGREDIENTS:
  • 1 cucumber, cut into 24 slices (around ¼ inch thickness)
  • 1 cup hummus
  • 12 olives, pitted and halved
  • Optional: fresh basil and/or dill
DIRECTIONS:
  1. Arrange the cucumber slices on a large platter then place a small spoonful of hummus on each. Top with fresh herbs and an olive half. It can be prepared a few hours in advance then covered in the refrigerator until serving.
