Nectarine Energy Balls

INGREDIENTS:
  • 1 cup cashew butter (or almond butter)
  • 1 cup rolled oats
  • 1 cup hemp seeds
  • 1 cup Medjool dates, pitted and chopped (approximately 16)
  • ¾ cup dried nectarine, finely chopped
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • **If the dried nectarines or dates are really dried out, place them in a bowl and pour in some hot water until it just covers the fruit and leave for 5-10 minutes then drain the water and they are ready to go. This is especially helpful for the dates if they are not moist and gooey on the inside
DIRECTIONS:
  1. Chop the dates and nectarines thoroughly then place them in a bowl with all the other ingredients and stir to combine. It is quite thick so kneading it with one hand (like when baking bread) can be more effective than using a spoon or other utensil.
  2. Alternatively, if you have a food processor it can be used to mix all the ingredients. Pulse until evenly combined and the mixture is sticking together.
  3. Take 2 tablespoons at a time and roll them into balls between your palms.
  4. Store in an airtight container in the fridge for up to a week or in the freezer for up to a couple months.
