Green Carrot Cake Smoothie

Some people scoff at the idea of eating rabbit food, clearly they have not tried putting carrots in smoothies. With enough fruit, cashew butter and a vanilla flavored protein powder they are a nutrient dense way to get a carrot cake flavor without the low quality oils and refined flour and sugars that are normally used in the actual cake. Plus the whole food ingredients contribute fiber, healthy fats, potassium, calcium and vitamins A, C and E. Carrots are an especially great source of vitamin A, which helps with maintaing healthy eyesight and skin, keeping a strong immune system, and cellular development, and just a single cup of carrots provides more than we need in one day.

Serves: 1-2
INGREDIENTS:
  • 1 large carrot
  • 1 small apple (a sweet variety like Gala, not a tart one like Granny Smith), cored
  • 1 frozen banana (peel before freezing)
  • 1 cup unsweetened almond milk (plain or vanilla)
  • 1 cup kale
  • 2 tablespoons dark raisins
  • 1 tablespoon cashew butter (or almond or peanut; or 2 tablespoons of raw cashews)
  • 1 tablespoon chia seeds
  • ½ teaspoon cinnamon
  • ¼ teaspoon vanilla extract
  • Optional: 1 scoop vanilla protein powder
  • Optional: 1 teaspoon of maca, lucuma, mesquite or other super food powder
  • Optional: 1 teaspoon of chlorella, spirulina or other greens powder
DIRECTIONS:
  1. Throw everything in a blender and blend on high until smooth and creamy.
