Maple Cinnamon Roasted Chickpeas

My brother absolutely loves chickpeas and he has a big sweet tooth, so I combined those preferences into one easy snack. Him eating a handful of these over a handful of oreos is a huge win for me. Chickpeas are full of fiber, protein, antioxidants and several nutrients including manganese, molybdenum and folate, all of which are important for keeping internal systems running smoothly and maintaining high energy levels. I also like them for snacks because they are very filling and easy to digest for most people, making them anti-bloating and nourishing. Although chickpeas are normally used in more savory dishes, I find that their buttery flavor and starchy texture are well complimented by some sweetness.

Maple Cinnamon Roasted Chickpeas

Serves: 4
INGREDIENTS:
  • 2 cups chickpeas (1 14 oz can, rinsed well)
  • 2 tablespoons cinnamon
  • 2 tablespoons plus 2 teaspoons maple syrup
  • 2 teaspoons cold-pressed olive oil
DIRECTIONS:
  1. Preheat oven to 400˚. Mix together the oil, 2 tablespoons of the maple syrup and cinnamon in a medium sized bowl then fold in the chickpeas and stir until fully coated. Place on a parchment lined baking sheet and bake for 30 minutes, stirring halfway through. Remove from the oven and drizzle on the 2 remaining teaspoons of maple syrup, stir gently until they are all coated and serve immediately or let them cool and they will become more crunchy.
