Paleo Omega Granola Clusters

This granola contains some plant sources that are particularly high in omega 3 fatty acids- the walnuts, hemp hearts and chia seeds, which help reduce inflammation and cholesterol and have and an anti-aging effect in our bodies. The difference between paleo granola and regular granola is that there are no grains like oats. I personally do not have a preference, taste or nutrition wise, but this can be a nice way to mix it up. You can sub in different dried fruits, nuts and seeds based on what you have available. The egg white is important because it is binds the bits together to form big clusters which can be eaten as is for a snack or over yogurt or porridge with some fruit for a meal.

INGREDIENTS:
  • 1 cup walnuts, chopped
  • 1 cup coconut ribbons
  • ¾ cup pecans, chopped
  • ½ cup hemp hearts (hemp seeds)
  • ⅓ cup raw honey or maple syrup (or a combination of both)
  • ¼ cup chia seeds
  • ¼ cup dried apricots, chopped
  • ¼ cup dried blueberries
  • 1 egg white
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla
DIRECTIONS:
  1. Preheat oven to 325°. Combine all the ingredients in a large bowl and stir until evenly mixed. Lay out on a parchment lined baking sheet, close together and about 1 inch thick. Bake for 40 minutes, stirring halfway through. Let cool completely before breaking into clusters.

  1. This granola smells and tastes soooo good! It smells like cake to me :). I followed the recipe exactly but baked it just a bit longer since I like it a bit crunchier. Love it!! Thank You!
