Peach Lime Yogurt ToastYogurt toast is a growing trend in the world of healthy, balanced breakfasts that can work any time of day. It has endless options and basically involves spreading some really thick Greek yogurt over toast then topping it with fruits, nuts, seeds, and/or herbs and possibly a drizzle of maple syrup or honey. Or going in the other direction, savoury toppings like fresh thinly sliced radishes, tomatoes or smoked salmon or leftover roasted vegetables can provide the toppings base instead of fruit. As far as the actual bread goes there are lots of options now for gluten-free that are getting better and better and for those that don’t mind a little of the wheat protein, hearty whole grain or sprouted whole grain breads take on the yogurt well. Denser, more flavourful bread made from whole grains has a wide range of nutrients and an almost nutty taste, when paired with creamy Greek yogurt it does not taste anywhere near as healthy as it is. To make this extra decadent and filling a big spoonful of nut butter can be spread straight onto the toast under the yogurt. This version gets a lot of sweetness from leftover grilled peaches and honey, a bright citrus note from lime zest and some extra flavour from fresh mint and basil. Simply preheat the oven, slice the peaches in half, remove the pits and place cut side down on a parchment paper lined baking sheet. They are ready when the skin starts to brown and shrivel up a bit. Grilling or roasting peaches caramelizes their sugars and really brings the flavour out but they remain soft and juicy.

Serves: 1
INGREDIENTS:
  • 1 piece of sprouted grain bread, toasted
  • ¼ cup plain Greek yogurt (go for a really thick brand like Greek Gods)
  • 1 peach, halved then sliced (use raw or leftover grilled/roasted)
  • 1 small lime (for the zest only)
  • 1 teaspoon raw honey
  • 1 large mint leaf, sliced thinly widthwise
  • 1 large basil leaf, sliced thinly widthwise
DIRECTIONS:
  1. Toast the bread then spread the Greek yogurt on top. Arrange the peach slices over the yogurt. Sprinkle the herbs over and grate the lime zest directly onto the toast. Drizzle with the honey and eat with a fork and knife.
