INGREDIENTS:
  • 4 delicata squash, halved and seeds scooped out
  • 2½ cups (375 g) turkey pepperoni, sliced thinly
  • 1½ cup (about 1 small 380 ml or 13 oz jar) pizza sauce
  • Optional: 1 cup light mozzarella, shredded
  • Optional: 1 teaspoon chives, sliced thinly
DIRECTIONS:
  1. Preheat oven to 400°. Place the squash cut side up on a parchment paper lined baking sheet. Mix together the pepperoni, pizza sauce and ½ cup of the mozzarella in a small bowl then spoon it out evenly into the squash cups. Cover with a large piece of aluminum foil and bake for 35 minutes. Remove the cover, sprinkle on the remaining ½ cup mozzarella and bake for 10 more minutes.
