Red Ginger Citrus Juice

Even the pickiest of eaters, children and adults alike, who generally avoid fruits and vegetables enjoy fresh pressed juices, especially when they are made mostly from fruits and have a vibrant color. Fresh juices are more delicate in flavor than commercial juices processed for a long shelf life and they are full of antioxidants, enzymes, vitamins and minerals. These delicate nutrients are most abundant in produce that ripened on the vine or tree and is as fresh and unadultered as possible. Juicing separates the juice from the fiber but leaves in the other good stuff. The better quality and fresher the produce used, the more nutrient dense the juice will be. Although whole fruits and vegetables are the best option most of the time (we do need lots of fiber on a daily basis), fresh juice can provide some fast nutrients and a healthy alternative to soda pop or a natural base for cocktails instead of artificially flavored syrups and mixes. This version is basically orange juice with a twist, the grapefruit balances out the sweetness a bit, the ginger adds a bite and the beet makes the juice an enticing rich red colour. I find it best diluted with a bit of sparkling water and maybe a shot of vodka with a sprig or two of mint.
