Reindeer Cheese and Crackers

Reindeer Cheese and CrackersCheese and crackers is a classic combination that appeals even to children and picky eaters alike. With just a couple extra ingredients this snack or appetizer can take on a seasonal twist and be made to resemble little reindeer. Reindeer Cheese and CrackersMini pretzels form the antlers, triangle-shaped cheese forms the head, capers or black peppercorns form the eyes (capers are much more mild in flavour so I went with those) and sliced stuffed olives create the nose.Reindeer Cheese and CrackersPretty much any kind of cracker can work for the base, here I used a thin wheat and cheese wafer, though rice crackers or parmesan crisps can be used for gluten-free options. For the cheese, something on the softer side like gruyère is easier to eat without making a huge mess. Gruyère is a great source of protein as well as calcium and phosphorus for strong bones and it is notably high in several B vitamins and vitamin A. It is however also quite high in saturated fat so  it is ideal to keep portions smaller and just have a few pieces. For crackers the healthiest options are usually the simplest ones- look for ones with a short ingredient list made up of easily recognizable foods, steer clear of the ones with lots of added fillers and preservatives.  Reindeer Cheese and Crackers

Serves: 16
INGREDIENTS:
  • 16 round crackers (rice crackers or parmesan crisps for gluten free)
  • 16 triangle-shaped pieces of soft cheese like gruyère (I used the Laughing Cow brand which already comes pre-cut in packages of 8)
  • 32 mini pretzels (gluten free option available at health food stores)
  • 32 capers (or black peppercorns)
  • 6 pimento stuffed olives
DIRECTIONS:
  1. Place a cheese triangle on each cracker then gently lift up the top two edges and place a pretzel under each. Next, place the eyes on and press down lightly so they don't roll off too easily and then finish them off with the noses. Store in the fridge covered in plastic wrap for up to a few hours before serving.
