Summer Fruit Skewers

Skewing fruits is a way to make fruit salad into finger food, an easy option for summer get togethers or for snacks on-the-go. This definitely doesn’t require a recipe or specific measurements. They can be more uniform with the fruits in the same order or they can be more sporadic.The fruits can be cut into different shapes and sizes or a melon baller works well to achieve this symmetrical look. This method does create a lot of waste but the leftover bits can be frozen and used for smoothies (or slushy cocktails).Papaya flesh has different ranges of pink, red and orange and the size of scoops from the melon baller can sometimes contain a slight colour gradation with beautiful sunset hues.Dragon fruits have beautiful and exotic insides and outsides, making them a great addition to fruit skewers. They come with either white or hot pink flesh and are heavily dappled with small black seeds.

Serves: 12
INGREDIENTS:
  • 1 large papaya
  • 1 small watermelon
  • 1 honeydew melon
  • 1 cantaloupe melon
  • 2 dragon fruit
  • 6 kiwis
DIRECTIONS:
  1. Use a melon baller to cut 12 circular pieces from each fruit then gently place one of each onto 12 skewers. Cut the rest of the flesh away from the skins, discard the skins and freeze the flesh for later use in smoothies and baking.
