Tuna Cucumber Rolls

Cucumbers are a good source of silica, a mineral that helps maintain healthy and lustrous skin, hair and nails. They also have a very high water content which helps maintain optimal hydration, a second factor that contributes to looking healthy and youthful on the outside. These two bite rolls can be appetizers or an alternative to little sandwiches at an afternoon tea. The dressing for the tuna salad filling is lightened up with plain Greek yogurt but still has some good quality mayonnaise for the flavor and a bit of marscapone cheese to add some decadence. The fresh green onion, dill and lemon juice add some flavor layers that make this taste fancy enough for foodies without adding anything but some vitamins, minerals and antioxidants.

Serves: 12 rolls
INGREDIENTS:
  • 2 cucumbers
  • 1 can tuna
  • 2 tablespoons plain Greek yogurt
  • 2 tablespoons regular mayonnaise
  • 1 tablespoon marscapone (or cream cheese)
  • 1 tablespoon green onion, minced
  • 2 teaspoons fresh dill, chopped finely
  • 1 teaspoon fresh lemon juice
  • 12 toothpicks
DIRECTIONS:
  1. Slice the cucumbers into thin slices with a mandolin or vegetable peeler and place them between paper towels to absorb the extra moisture. Now, add all the other ingredients together and stir to combine. Lay out the cucumber slices and place a dollop of the tuna mixture onto each end, then roll up, starting on the end with the filling. Secure with toothpicks. (Optional) serve with sprigs of dill.
