Spaghetti squash is a pretty unique vegetable. Once it is cooked it comes apart into long strands that look like regular spaghetti noodles. Beyond the cool factor, this squash is rich in potassium and vitamins A and C. It has a fraction of the calories and carbohydrates (not that those should be avoided) of regular white flour pasta but more fiber, which helps it to be just as filling, minus the resulting sluggishness and food coma that processed flours can bring. Bacon Egg Salad
Eggs are a great source of easy to digest protein and their yolks have an important nutrient called lecithin which helps with memory and other cognitive processes. They also contain several other vitamins and minerals, many of which are mostly concentrated in the yolks. There is some concern over the substantial presence of cholesterol also in the yolks, but research seems to be showing that eating eggs regularly does not seem to significantly raise serum (blood) cholesterol levels in the body. Roasted Brussels Sprouts
Brussels sprouts are generally one of those healthy but yucky foods for most people. Yet, with the right ingredients their unusual flavor can be enjoyable. Brussels sprouts are part of the cruciferous vegetable family, and they are high in sulfur, several vitamins and minerals, and surprisingly for a vegetable, protein. Continue Reading →
Quinoa Pepperoni Pizza Bites
These pizza flavor inspired bites are just as unlimited as actual pizza pies when it comes to ingredients you can add in, but they offer much more fiber, protein and nutrients than a regular pizza. Plus they are free from the preservatives and fillers that normally lurk in pre-made frozen pizza bites. Continue Reading →
Crockpot Lamb Shanks
Lamb shanks are not very tender but with a bit of prep work and a day in the slow cooker they will be falling off the bone, and they are much lower in saturated fat than some other cuts. Lamb meat is a good source of iron, zinc and several B vitamins- all of which are integral for forming red blood cells and maintaining high energy levels and a strong immune system. Mini Breakfast Bacon Bites
These are so cute but good and manly enough to get a stamp of approval from my pickiest brother. Eggs, yolks and all, are a super food. There are a few different ways to measure protein sources to see how much we can actually absorb and eggs always end up at the top. Continue Reading →
Eggplant Bruschetta with Deconstructed Guinness Cottage Pie
One of my brothers has been complaining that the food I have been making lately is not up to his standards. He likes his food to be beige, maybe with a bit of brown, simple and hearty. I made this with him in mind and he said I redeemed myself. It has the same basic flavors as cottage pie, which is shepherd’s pie with beef instead of lamb, but it is easier to throw together. The bruschetta is a lighter take on the classic, with the added vitamins A, B, and C and calcium and magnesium that eggplant offers. Continue Reading →
Broccoli Bacon Salad
Once upon a time I went vegan for a few years. During that period green vegetables made up a large component of my regular diet. I fell in love with them all, except for raw broccoli. This salad definitely changes that. In the winter I like to use raisins for this but since it is summer, grapes make a very good substitute. This can be made the day before serving because it is even better after some time in the fridge to marinate. Continue Reading →
