It is considered to be a very nutrient dense food because of its high concentration of carbs, proteins, antioxidants, phytonutrients and vitamins. Cookie Dough Bites
I couldn’t decide what flavor to go with so I combined all the ones I wanted- oatmeal raisin, chocolate chip, peanut butter and apple cinnamon. Unfortunately I forgot to pick up white chocolate and macadamia nuts. Luckily they all come together pretty well because this recipe makes a very large yield. Maple Cinnamon Roasted Chickpeas

Gringo Chimichurri Quinoa Salad
Chimichurri is one of my favorite condiments because it is so fresh, vibrant and flavorful. It originated in Argentina but there are several variations across the different countries and regions in South America, most of which have parsley and garlic as the central flavors. It is most commonly used as an accompaniment with grilled meats, and this version is more mild than most but still has enough oomph to liven up quinoa.
