Roasted Brussels Sprouts

Serves: 2-4
INGREDIENTS:
  • 2 cups brussels sprouts, cut in half
  • ⅓ cup bacon, cut into small pieces
  • ¼ cup dried cranberries
  • 2 tablespoons maple syrup
  • 2 tablespoons onion, minced
  • 1 tablespoon grainy mustard
  • 1 tablespoon balsamic vinegar
DIRECTIONS:
  1. Preheat oven to 325°. Place all the ingredients, except the cranberries, on a small parchment lined baking sheet and mix around until thoroughly combined. Bake for 40 minutes, stirring halfway through. Then add in the cranberries and bake for another 5 minutes.
