Spring Detox Salad

Serves: 4
INGREDIENTS:
  • 3 cup kale, shredded
  • 1½ cup sprouts
  • 1 cup cucumber, sliced thinly
  • 1 red bell pepper, julienned
  • ΒΌ cup pumpkin seeds
  • A dash or two of sea salt to taste
  • Optional: 1 cup cooked brown basmati rice
  • Dressing
  • 2 tablespoons raw apple cider vinegar
  • 1 avocado
  • 1 pear
DIRECTIONS:
  1. Blend all the dressing ingredients together in a blender or using a hand held mixer then mix in with all the other ingredients in a large bowl.
