Nourishing Buddha Bowl

INGREDIENTS:
  • 1 cup broccoli, chopped into bite sized pieces
  • 1 cup cauliflower, chopped into bite sized pieces
  • ½ cup cooked millet
  • ½ cup chickpeas
  • ½ avocado, cubed
  • 1 small carrot, grated
  • ¼ cup beet, grated
  • 1 tablespoon green onion, sliced thinly
  • 1 tablespoon raw pumpkin seeds
  • Dressing
  • 2 tablespoons cashew butter (or almond or peanut)
  • 2 tablespoons water
  • 1 tablespoon nutritional yeast
  • 1 tablespoon raw apple cider vinegar
  • 1 dash each of sea salt, black pepper and cayenne pepper
DIRECTIONS:
  1. Set up a double broiler on the stove over medium high heat and once the water is boiling, add the cauliflower and broccoli to steam for 5 minutes. Mix all the dressing ingredients until thoroughly combined. Place everything in a large bowl and drizzle the dressing over top.
