INGREDIENTS:
  • Bottom layer
  • 6 cups fresh berries (I used 3 cups blackberries and 3 cups blueberries)
  • 1 tablespoon almond flour
  • 1 tablespoon palm sugar
  • 1 tablespoon cornstarch
  • Top layer
  • 2 cups oats
  • ¾ cup peanut butter
  • ¼ cup almond flour
  • ¼ cup palm sugar
  • ¼ cup maple syrup
  • 1 teaspoon cinnamon
  • ⅛ teaspoon sea salt
DIRECTIONS:
  1. Preheat oven to 375°. Mix together the bottom layer ingredients in a deep 9x9 inch dish then press down firmly so there are no spaces between the berries. Mix together the top layer ingredients in a medium sized bowl then evenly pour it over the bottom layer and press down once more so everything is compact. Bake for 30 minutes, the top layer should be golden brown and the bottom layer starts to bubble up around the sides. Set aside to cool for 5-10 minutes then serve warm.
