Preheat the oven to 350°. Place the egg in a medium sized bowl and whisk it until the yolk and whites are combined then stir in the rest of the wet ingredients. Place all the dry ingredients in a small bowl then pour them into the wet ingredients and stir thoroughly until combined. Spoon 2 tablespoons at a time onto parchment lined baking sheets. They will spread out so evenly space 9 cookies per sheet and bake for 15 minutes.
