Blend together the coconut milk and dates in a blender or food processor until the dates are broken up completely, then add in the chia seeds, vanilla and ½ of the lime juice and whisk until evenly combined. Pour into three separate jars or bowls and refrigerate for 20 minutes. Meanwhile place the kiwi and mango in a bowl with the rest of the lime juice to marinate. Once the chia pudding is thickened up serve with the fruit on top and sprinkle with lime zest and/or desiccated coconut. It will keep in the fridge for 2-3 days covered with a tight fitting lid.
