Serves: Yields 18
INGREDIENTS:
  • 1½ cups unsweetened shredded coconut
  • ½ cup plain raw cashews, chopped very finely (should be almost like flour with a few slightly larger pieces)
  • ¼ cup dried pineapple, chopped very finely
  • 2 tablespoons cashew butter
  • 1 tablespoon cold-pressed coconut oil
  • 1 tablespoon maple syrup
DIRECTIONS:
  1. Mix all the ingredients together in a large bowl until fully combined then form two tablespoons at a time into balls. Store in a sealed container in the fridge for a couple weeks or in the freezer for longer.
