1 cucumber, cut into 24 slices (around ¼ inch thickness)
1 cup hummus
12 olives, pitted and halved
Optional: fresh basil and/or dill
DIRECTIONS:
Arrange the cucumber slices on a large platter then place a small spoonful of hummus on each. Top with fresh herbs and an olive half. It can be prepared a few hours in advance then covered in the refrigerator until serving.
