Optional: 4 fillets smoked salmon (each around 4 oz)
Orange Cashew Dressing
3 tablespoons freshly squeezed orange juice
2 tablespoons cashew butter
1 teaspoon dijon mustard
1 teaspoon cold-pressed olive oil
1 teaspoon maple syrup (or raw honey)
DIRECTIONS:
Mix together the dressing ingredients then toss with the greens, blueberries and chives until well distributed. Add in the salmon last and toss gently so it doesn't separate too much.
