1 tablespoon cold-pressed oil with a high smoke point, camelina or coconut are ideal, or melted butter
1-2 tablespoons maple syrup
DIRECTIONS:
Preheat the grill, a panini grill works too in place of a barbecue.
Slice the peaches in half and pull apart (gently twist a bit if necessary), use a spoon to scoop out the pit on the side it sticks to.
Brush the oil or butter onto the cut side of the peaches with a pastry brush then place them on the grill cut side down. Rotate them 90 degrees after 3 minutes for crisscrossed grill marks. Remove from the grill after another 3-5 minutes, once the outer skins start to look a bit shrivelled. Brush the cut sides with maple syrup and sprinkle the pecans on top.
