Strawberry Kiwi Avocado Salad with Lemon Poppy Seed Dressing
- 8 cups spinach
- 1 pint strawberries, quartered (around 2 cups)
- 4 kiwis, peeled, halved and sliced
- 2 large avocados, diced
- 2 tablespoons red onion, thinly sliced
- Optional: ¼ cup fresh cilantro, destemmed
- Lemon Poppy Seed Dressing
- 2 tablespoons plain Greek yogurt (or coconut/nut based for dairy-free)
- 1 tablespoon freshly squeezed lemon juice (from ½ lemon)
- 1-2 teaspoons honey, depending on preference and tartness of lemon (or maple syrup)
- 1 teaspoon cold-pressed olive oil
- ¼ teaspoon poppy seeds
- ¼ teaspoon lemon zest
- Toss all the salad ingredients together in a large bowl. Whisk the dressing ingredients together in a small bowl then toss until evenly distributed.
