Chocolate Cherry Pecan Stacks

INGREDIENTS:
  • 2 100g dark chocolate bar (around 70%)
  • 1 cup puffed brown rice
  • ½ cup puffed millet
  • ½ cup dried cherries
  • ½ cup chopped pecans
DIRECTIONS:
  1. Place the rice, millet, cherries and pecans in a medium sized bowl and set aside.
  2. Set up a double boiler and once it starts to steam place a small pot with the chocolate over top and stir constantly until melted. Pour the melted chocolate over the rice mixture, using a spatula to get it all out and fold gently until the chocolate is evenly distributed and coating everything.
  3. Scoop out around 2 scant tablespoons at a time and drop the mixture onto a parchment paper lined baking sheet. It will not stick together at all at this point but as long as the pieces are touching they will assimilate as the chocolate cools. Place in the refrigerator for at least an hour so that the chocolate fully hardens back up. Serve cold or store in an airtight container in the refrigerator for up to a couple weeks.
