Moroccan Spiced Cauliflower Couscous

INGREDIENTS:
  • 1 head cauliflower, grated (around 8 cups)
  • 1 onion, minced
  • 1 tablespoon cold pressed olive oil
  • 1 teaspoon cumin
  • ½ teaspoon coriander
  • ¼ teaspoon cinnamon
  • ¼ teaspoon dried ginger
  • ¼ teaspoon turmeric
  • ¼ teaspoon paprika
  • 1 clove garlic, minced
  • Post cooking additions
  • ½ cup pistachios, chopped (or almonds, hazelnuts or pine nuts)
  • ½ cup raisins
  • ½ cup fresh parsley, chopped
  • ½ cup fresh cilantro, chopped
  • ¼ cup sesame seeds
  • ¼ cup fresh mint, chopped
  • ¼ cup freshly squeezed orange juice
  • 1 tablespoon lemon juice
  • A few dashes of sea salt
  • Optional: hot sauce or harissa for some spiciness
DIRECTIONS:
  1. Medium high 7 minutes
