Moroccan Spiced Cauliflower Couscous
- 1 head cauliflower, grated (around 8 cups)
- 1 onion, minced
- 1 tablespoon cold pressed olive oil
- 1 teaspoon cumin
- ½ teaspoon coriander
- ¼ teaspoon cinnamon
- ¼ teaspoon dried ginger
- ¼ teaspoon turmeric
- ¼ teaspoon paprika
- 1 clove garlic, minced
- Post cooking additions
- ½ cup pistachios, chopped (or almonds, hazelnuts or pine nuts)
- ½ cup raisins
- ½ cup fresh parsley, chopped
- ½ cup fresh cilantro, chopped
- ¼ cup sesame seeds
- ¼ cup fresh mint, chopped
- ¼ cup freshly squeezed orange juice
- 1 tablespoon lemon juice
- A few dashes of sea salt
- Optional: hot sauce or harissa for some spiciness
- Medium high 7 minutes
