6 pears, halved and pitted (melon ballers work really well for getting the seeds out)
¼ cup maple syrup
1 vanilla bean
DIRECTIONS:
Preheat oven to 400°. Mix together the maple syrup and vanilla and set aside with a pastry brush handy. Cut out the pear seeds and stem, working quickly so they don't brown and lay them out on a parchment paper lined baking sheet. Pick the pears up one by one and use the pastry brush to brush the maple mixture all over. Bake for 30-35 minutes, until the skin starts to shrivel a bit and a fork inserts easily all the way through the thickest part of the pears. Leftovers can be refrigerated for a few days.
