Granola Baked Apples

Serves: 6
INGREDIENTS:
  • 6 medium apples (sweet versions like Gala are nice)
  • 1 cup rolled oats
  • ½ cup nuts, chopped (I used pecans and hazelnuts)
  • ⅓ cup almond butter (or any nut butter)
  • 2 tablespoons maple syrup
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Optional: butter or coconut oil, around ½ teaspoon per apple
DIRECTIONS:
  1. Preheat oven to 350°. Mix together the oats, nuts, nut butter, maple syrup, cinnamon and nutmeg until fully blended. Core the apples and place them in a baking dish (large pie plates work well). If you do not have an apple corer then a melon baller or sharp, long and thin knife will do the trick, make sure the hole in the middle is around 1 inch in diameter. Stuff the granola into the apples, packing it down firmly. Cover the dish with a layer of aluminum foil and bake for 20 minutes. Remove the tin foil (option: add a small piece of butter or coconut oil on each apple now) and bake for 20 more minutes. Once fully baked the apples should be easy to pierce through with a fork, if they are on the larger size they may need an additional 5 minutes or so. Leftovers can be stored in the fridge in an airtight container for a couple days and then reheated for breakfast or snacks.
