Spicy Soba Salad

INGREDIENTS:
  • 1 small bundle soba noodles (1/4-1/3 of a 250g package)
  • 1 cup zucchini, julienned (or any fresh vegetables)
  • ½ avocado, diced
  • 2-4 tablespoons cilantro, chopped (or any fresh herbs)
  • 1 teaspoon green onion, sliced thinly
  • Dressing
  • 2 tablespoons plain Greek yogurt (mashed avocado, nut butter or non-dairy yogurt for dairy free)
  • 2 teaspoons hot sauce (I used Sriracha and Frank's combined)
  • ½ teaspoon raw honey
DIRECTIONS:
  1. Bring a large pot half full of water to a boil over high heat. Cook soba noodles according to package directions then drain and rinse with cold water until they cool down. Add back to the pot and toss with the dressing then add in all the other ingredients and stir until evenly combined.
