Espresso Brownie Bites

INGREDIENTS:
  • 1 packed cup medjool dates, pitted and chopped (around 14-16 dates)
  • ½ cup walnuts, chopped finely
  • ¼ cup raw cacao
  • ¼ cup almond butter
  • 2 teaspoons espresso powder (or very finely ground coffee)
DIRECTIONS:
  1. Mash all the ingredients except the walnuts together with your hands or in a food processor until the dates become a paste and everything is fully blended. Fold in the walnuts and knead until evenly distributed. Scoop the mixture into a parchment paper lined 7x7" tray, pressing it all the way to the edges in an even layer, and place in the freezer for around 20 minutes (this makes it sturdier and easier to cut). Remove from freezer, use the side corners of the parchment paper to lift the brownies out and cut them into squares. Store in an airtight container in the fridge for up to a few weeks.
