Strawberry Power Balls

INGREDIENTS:
  • 1 packed cup medjool dates, pitted and chopped (around 16)
  • 1 cup cashew butter
  • ⅔ cup puffed brown rice (or another puffed whole grain like quinoa or millet)
  • ⅓ cup hemp seeds
  • ⅓ freeze dried strawberries, chopped finely
  • ½ teaspoon beet powder (plus more for sprinkling or rolling the balls in)
DIRECTIONS:
  1. Mix all the ingredients together in a large bowl until fully combined then form two tablespoons at a time into balls. Now the balls can be rolled in or sprinkled with extra beet powder for a pinker effect. Store in a sealed container in the fridge for a couple weeks or in the freezer for longer.
