Berry Chia Pudding Parfaits

Serves: 4
INGREDIENTS:
  • 2 cups plain Greek yogurt
  • Berry Chia Pudding
  • 2 cups strawberries, de-stemmed and chopped
  • 1 cup blackberries
  • ½ cup chia seeds
  • Banana Smoothie
  • 2 frozen bananas
  • ½ cup unsweetened plain almond milk
  • 4 medjool dates, pitted
  • 2 tablespoons cashew butter (or any nut butter)
DIRECTIONS:
  1. Blend the berries in a high-speed blender or food processor until they are completely broken down and the mixture is smooth- it should be around 2½ cups. Vigorously whisk or stir in the chia seeds and set aside for around 30 minutes to gel up, stirring every 5-10 minutes as possible. It should become quite thick and more solid than liquid.
  2. Blend the smoothie ingredients together until smooth.
  3. Layer the berry chia pudding and smoothie with the yogurt in 4 tall and narrow bowls, glasses or jars. Refrigerate until serving, up to 2 days or so.
