There are currently a couple pretty trendy dishes to make from chia seeds- chia pudding and chia jam- and this is sort of a combination of the two. Along with some yogurt and a thick smoothie it makes for a very healthy parfait with a large range of vitamins, minerals and antioxidants.Any berries work, fresh or frozen, but the sweeter and more flavourful the better. The berries turn into a purée easily in a high-speed blender or food processor. It’s good to taste it now and add some sweetener like raw honey or maple syrup if necessary.Chia seeds are great for making anything thick, once they come in contact with liquid they gradually gel and the whole mixture transforms to have a pudding-like consistency. Not to mention they are little nutrition powerhouses with lots of fiber and protein to make the parfait filling and grounding.The trick with chia seeds is to stir them in really well, then stir a bit more as possible for the first 20-30 minutes so that they don’t clump together.
- 2 cups plain Greek yogurt
- Berry Chia Pudding
- 2 cups strawberries, de-stemmed and chopped
- 1 cup blackberries
- ½ cup chia seeds
- Banana Smoothie
- 2 frozen bananas
- ½ cup unsweetened plain almond milk
- 4 medjool dates, pitted
- 2 tablespoons cashew butter (or any nut butter)
- Blend the berries in a high-speed blender or food processor until they are completely broken down and the mixture is smooth- it should be around 2½ cups. Vigorously whisk or stir in the chia seeds and set aside for around 30 minutes to gel up, stirring every 5-10 minutes as possible. It should become quite thick and more solid than liquid.
- Blend the smoothie ingredients together until smooth.
- Layer the berry chia pudding and smoothie with the yogurt in 4 tall and narrow bowls, glasses or jars. Refrigerate until serving, up to 2 days or so.
