PB&J Crisp

Fruit crisp is a really easy and fast dessert to make. It is not finicky at all, the ingredients and their ratios do not have to be very specific and it always turns into a warm, grounding dish. Since the doughy part is made primarily from oats (whole grains) instead of refined white flour like fruit pies and tarts the end product has much more protein and fiber as well as B vitamins and several minerals including manganese, magnesium and phosphorus, all important for bone formation and several other body functions. Not only do all those nutrients make it healthier, but they also make it more filling.

Since crisp is pretty similar to granola, any leftovers make a good breakfast with some yogurt. For this one I used fresh, local berries to form a thick, rich base reminiscent of homemade jam. Butter is usually used in crisp part to add flavor and keep the oats and flour together but any kind of nut butter can do that job so I substituted peanut butter to compliment the berries.

INGREDIENTS:
  • Bottom layer
  • 6 cups fresh berries (I used 3 cups blackberries and 3 cups blueberries)
  • 1 tablespoon almond flour
  • 1 tablespoon palm sugar
  • 1 tablespoon cornstarch
  • Top layer
  • 2 cups oats
  • ¾ cup peanut butter
  • ¼ cup almond flour
  • ¼ cup palm sugar
  • ¼ cup maple syrup
  • 1 teaspoon cinnamon
  • ⅛ teaspoon sea salt
DIRECTIONS:
  1. Preheat oven to 375°. Mix together the bottom layer ingredients in a deep 9x9 inch dish then press down firmly so there are no spaces between the berries. Mix together the top layer ingredients in a medium sized bowl then evenly pour it over the bottom layer and press down once more so everything is compact. Bake for 30 minutes, the top layer should be golden brown and the bottom layer starts to bubble up around the sides. Set aside to cool for 5-10 minutes then serve warm.

    I don’t leave many messages, but I check recipes all the time. I am definitely going to make this fruit crisp this weekend. We love them and I love peanut butter. I would never have thought to use it in the topping. great idea.
