Pumpkin Pie Spiced Nuts

These are one of my most special treats. They add an extra touch of crunch and sweetness to salads, oatmeal, and my personal favorite base, plain greek yogurt. Nuts are a good source of healthy fats and vitamins A and E. The sweetener, palm sugar, is lower on the glycemic index than most other sweeteners, meaning that it does not have as dramatic of an effect on blood sugar and it has a more decadent, caramelly flavor.

INGREDIENTS:
  • 2 cups pecans
  • 1 cup hazelnuts
  • ¼ cup palm sugar
  • 2 tablespoons butter
  • 3 tablespoons water
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 pinch of sea salt
DIRECTIONS:
  1. Preheat oven to 300°. Heat the butter in a pan on the stove over medium heat. Add in the water, sugar, pumpkin pie spice, vanilla and sea salt and stir until the sugar dissolves and the mixture is smooth. Remove from heat and fold in the nuts, stirring until the sugar mixture is evenly distributed. Pour the nuts onto a parchment lined baking sheet and bake for 20 minutes, stirring halfway through. They will not be crunchy until they are completely cooled. They can be stored in an airtight container at room temperature.
