Quinoa Pepperoni Pizza Bites

These pizza flavor inspired bites are just as unlimited as actual pizza pies when it comes to ingredients you can add in, but they offer much more fiber, protein and nutrients than a regular pizza. Plus they are free from the preservatives and fillers that normally lurk in pre-made frozen pizza bites. They make an easy appetizer or they can be refrigerated and reheated for quick snacks.

Quinoa Pepperoni Pizza Bites

Serves: 24 mini bites
INGREDIENTS:
  • 2 cups cooked quinoa
  • 1 cup pepperoni, chopped finely
  • ½ cup mozzarella, grated finely
  • ¼ cup parmesan, freshly grated
  • 2 eggs
  • ¼ teaspoon sea salt
  • ¼ teaspoon dried oregano
  • For dipping: ½ cup tomato sauce
  • Optional topping: fresh parsley, minced
DIRECTIONS:
  1. Preheat the oven to 350°. Place the eggs in a large bowl and whisk until the yolks and whites are mixed. Add in all the other ingredients and stir to combine evenly. Grease a mini muffin tin lightly (I recommend using butter or cold-pressed olive oil and using your fingers or a piece of wax paper to leave a light layer all around the bottoms and sides) and then spoon in the quinoa mixture and press down on the tops so the filling is compact. Bake for 20 minutes then use a butter knife to pop the bites out of the pan and serve warm with tomato sauce for dipping.
